How to Plant Lamb’s Lettuce

To get started, sow lamb’s lettuce seeds directly into prepared soil or containers. Scatter the seeds thinly across the surface, cover lightly with compost, and water gently. Keep the soil moist but not waterlogged, and in about 7–10 days you’ll see the first seedlings appear. You’ll have everything you need in the Grow Box to grow in containers. 

Once established, you can begin harvesting by snipping off outer leaves as you need them, or pull up whole plants for larger harvests. Sowing little and often ensures a continuous supply of fresh leaves right through Winter.

A Perfect Autumn Recipe: Seed Folk Salad

Once your Lamb’s Lettuce is ready to harvest, you’ll want to enjoy it at its freshest. Here’s one of our favourite recipes, packed with Autumn goodness and perfect for showcasing your homegrown greens.

Quick & Simple Honey Dijon Vinaigrette

  • 1.5 tbsp extra-virgin olive oil
  • 2 tsp apple cider vinegar
  • 2 tsp honey
  • 1 tsp Dijon mustard

Salad Ingredients

  • 1 handful of baby perpetual spinach
  • 1 handful of baby kale
  • 1 handful of lambs’ lettuce
  • 1 handful of mustard greens
  • 60g berries of choice
  • 140g chickpeas (drained and rinsed)
  • 4 spring onions
  • 25g nuts of choice
  • 50g crumbled feta

Instructions

Make the Vinaigrette

  1. Add the olive oil, apple cider vinegar, Dijon mustard, and honey to a jar with a lid.
  2. Close tightly and shake well until combined.

Prepare the Salad

  1. Slice the spring onion and drain the chickpeas.
  2. In a large bowl, toss together the perpetual spinach, baby kale, lambs’ lettuce, and mustard greens.
  3. Add the berries, onion, chickpeas, nuts, and feta, then toss again.
  4. Drizzle with the vinaigrette just before serving or serve it on the side.
