CHIVES

Chives are a hardy perennial herb with slender green leaves and a delicate onion flavour. Perfect for sprinkling over potatoes, salads, soups, eggs and summer dishes, they add freshness without overpowering other ingredients.

Once established, chives will continue producing year after year, making them one of the most rewarding herbs to grow. Their attractive purple flowers also edible, are also loved by pollinators, bringing extra life to the garden.

HOW TO GROW CHIVES

Sow chive seeds in pots, trays or directly into the ground during spring and early summer. Cover lightly with compost and keep moist while germination takes place.

Chives thrive in full sun or partial shade and are happy in containers, raised beds or herb gardens. Water regularly during dry spells and keep plants tidy by removing any faded leaves.

Harvest by snipping leaves from the outside of the clump, leaving the centre to continue growing. Regular cutting encourages fresh growth and provides a continuous supply of flavourful leaves throughout the season.

 

Chives: 4 Easy Ways to Use Them

Fresh, mild and versatile, chives add a gentle onion flavour to many dishes. They are rich in vitamins A and C and are an easy way to add flavour without extra calories.

Prep time: 5 minutes

Chive Butter

Ingredients

100g butter (softened)

2 tbsp fresh chives (finely chopped)

Pinch of salt

Optional: black pepper or lemon zest

Method

1.       Place the softened butter in a bowl.

2.       Stir in the chopped chives and salt.

3.       Mix until well combined.

4.       Roll into a log using baking paper or store in a container.

5.       Chill until firm.

Steak

Corn on the cob

Crusty bread

Chive Sour Cream Dip

Ingredients

200g sour cream or Greek yogurt

2 tbsp fresh chives (chopped)

1 tsp lemon juice

Salt and black pepper

Method

1.       Combine all ingredients in a bowl.

2.       Mix well.

3.       Chill for 15 minutes before serving.

Serve with

Vegetable sticks

Crisps

Baked potatoes


Chive Vinaigrette

Ingredients

2 tbsp olive oil

1 tbsp lemon juice

1 tbsp fresh chives (chopped)

 1 tsp Dijon mustard (optional)

Salt and pepper

Method

1.       Whisk all ingredients together in a small bowl.

2.       Taste and adjust seasoning.

3.       Drizzle over salads or vegetables.

French bean salad

Roasted vegetables

Chive Scrambled Eggs

Ingredients

2 eggs

1 tbsp chives (chopped)

Small knob of butter

Salt and pepper

Method

1.       Beat the eggs with a pinch of salt.

2.       Melt the butter in a pan over low heat.

3.       Cook the eggs gently, stirring continuously.

4.       Stir in the chives just before serving.

5.       Season with black pepper.

Toast

Smoked salmon

Avocado

Storage Tips

Keep fresh chives in the fridge wrapped in a damp paper towel.

Chives can be chopped and frozen for later use.

 Best added at the end of cooking to keep their flavour fresh.
