WHAT’S INSIDE THE MAY GROW KIT
May is when the garden really comes to life. With warmer days, longer evenings and the last risk of frost fading away, it’s the perfect time to plant out and get growing in full swing. COURGETTES
Courgettes are crop that just keeps on giving! Known for their vigorous growth and heavy yields, they quickly become the stars of the garden once established. The ‘Black Beauty’ variety produces smooth, dark green fruits with a mild, versatile flavour that works across a wide range of dishes.
With the right conditions, just one plant can provide a continuous harvest throughout the summer months. It’s a crop that gives back generously, making it ideal for both beginners and experienced growers alike.

HOW TO GROW COURGETTES
Sow courgette seeds indoors in early spring or directly outdoors from May once the risk of frost has passed. Plant seeds about 2–3 cm deep in rich, well drained compost and place in a warm, sunny spot.
Once seedlings are strong and the weather has warmed, transplant them into their final position in the ground, raised beds or large containers. Courgettes need plenty of space to spread, along with regular watering to keep the soil consistently moist.
Feed plants every couple of weeks and harvest fruits when they are still young and tender, around 10–15 cm long to encourage continuous production. The more you pick, the more they grow, giving you a supply all summer long.

COOKING WITH COURGETTES:
COURGETTE FLATBREAD RECIPE
A healthier, higher protein alternative to shop bought flatbreads, this courgette flatbread is fresh, filling, and full of flavour.

Cooking time: 20min
Ingredients
For the flatbread base
150g self-raising flour
(or 150g plain flour + 1½ tsp baking powder)
150g Greek yogurt or SKYR Yoghurt
½ tsp salt
1 tbsp olive oil
For the topping
1 medium courgette (thinly sliced)
1 tbsp olive oil
1 garlic clove (minced)
½ tsp dried oregano (or mixed herbs)
Salt & black pepper (to taste)
80–100g grated cheese (e.g. mozzarella or cheddar)
20g hard cheese (e.g. Parmesan or Grana Padano)
Fresh basil or parsley (to finish)
Chilli flakes (optional)
Method
1. Make the dough
In a bowl, mix the flour, salt, and yogurt.
Add the olive oil and combine until it forms a soft dough.
Knead for 1–2 minutes until smooth.
2. Shape the base
Roll the dough out into a thin round or oval (about 3mm thick).
Place on a lined baking tray.
3. Prepare the courgette
Slice the courgette thinly.
Heat olive oil in a pan, add garlic, then the courgette.
Season with oregano, salt, and pepper.
Cook for 4-5 minutes until slightly softened.
4. Assemble
Top with grated cheese.
Spread the courgette over the flatbread.
Grate hard cheese over the top.
5. Bake
Bake at 200°C (180°C fan) for 18-20 minutes,
until golden and the cheese is melted.
6. Finish
Take the flatbread out of the oven and finish with fresh herbs.
Optional: drizzle a little olive oil over the top or brush garlic butter around the edges. You can also spoon over some parsley pesto (check out our recipe) for extra flavour.
Tips
Use a thick, high-quality Greek yogurt → less sticky
SKYR yoghurt is a great option as it is high in protein and is usually fat free
If dough is sticky, add a little extra flour
For extra crispiness, pre-bake the base for 5 minutes before adding toppings
Lightly salting and patting dry the courgette helps avoid sogginess
