HOW TO GROW CURLED PARSLEY

Curled parsley can be sown indoors or directly outdoors once temperatures begin to warm. For best results, soak the seeds in water overnight before planting to help improve germination.

Fill pots or trays with moist, free draining compost and sow seeds thinly, covering lightly with soil. Place in a bright spot and keep the compost consistently moist. Germination can take 2–4 weeks, so patience is key.

Once seedlings are large enough to handle, thin or transplant them to give each plant space to grow. Parsley thrives in a sunny or partially shaded spot with regular watering.

Harvest leaves from the outside of the plant first, allowing the centre to continue producing fresh growth. With regular picking, curled parsley will provide fresh herbs for many months.

Fresh, vibrant and full of flavour, this parsley pesto is a versatile, nutrient-rich alternative to traditional pesto.

Prep time: 5–10 minutes

Cooking time: None

Serves: 3–4 portions

Ingredients

1 large bunch fresh parsley (50g)

1 - 2 garlic cloves

30g nuts (e.g. pine nuts, walnuts, or almonds)

30g hard cheese (e.g. Parmesan or Grana Padano)

5 tbsp olive oil

1–2 tbsp lemon juice

Salt & black pepper (to taste)

Method

1. Prepare

Wash and roughly chop the parsley.

Peel the garlic.

2. Blend

Add parsley, garlic, nuts, and cheese to a blender or food processor.

Pulse until roughly combined.

3. Add liquids

Slowly add olive oil and lemon juice while blending until smooth.

4. Season

Taste and add salt and pepper as needed.

5. Adjust

Add more oil for a smoother texture

Add a little water or extra lemon juice for a lighter version

Mix into pasta → quick parsley pesto pasta

Spread on bread → top with tomatoes for a fresh snack

Drizzle over garlic bread for extra flavour
