Pot To Plate: Crispy Sage | Seed Folk

CRISPY SAGE 

Simple, crisp and packed with flavour, crispy sage is an easy way to elevate everyday meals. Ready in just a couple of minutes, these golden, fragrant leaves add a delicious crunch to pasta, risottos, soups, roasted vegetables and more. Don't forget the sage-infused butter – it's just as delicious!

Serves: Enough to garnish 2–4 dishes

Ingredients

15–20 fresh sage leaves

2 tbsp unsalted butter (or olive oil)

A pinch of sea salt (optional)

Method

Gently wash and thoroughly pat the sage leaves dry with kitchen paper.

Heat the butter in a frying pan over a medium heat until melted and beginning to foam.

Add the sage leaves in a single layer and fry for 30–60 seconds, turning once, until crisp but not browned.

Remove the leaves with a slotted spoon and place them on kitchen paper to drain.

Sprinkle with a little sea salt, if desired, and serve immediately.

Tip

Don't throw away the butter! It becomes infused with the delicious flavour of sage and is perfect for drizzling over pasta, gnocchi, roasted vegetables or mashed potatoes.

Delicious Ways to Use Crispy Sage

Toss through ravioli or your favourite pasta with the sage butter.

Sprinkle over mushroom or pumpkin risotto.

Add to butternut squash or pumpkin soup.

Scatter over roasted potatoes or root vegetables.

Top creamy mashed potatoes.

Layer between chicken and Parma ham before baking.

Garnish gnocchi with Parmesan and browned butter.

Finish scrambled eggs or an omelette.

Serve over roasted pork, chicken or steak.
