Lamb’s Lettuce & Warm Potato Salad

Lamb’s lettuce is the star of this simple salad, with its fresh leaves and delicate, slightly nutty flavour. Warm baby potatoes, red onion and a honey-mustard dressing turn it into a delicious side dish or light lunch.
Serves 4 as a side

Ingredients
100g lamb’s lettuce
750g baby potatoes, halved if large
½ small red onion, thinly sliced
1 tbsp fresh chives, finely chopped
Salt and black pepper

For the honey-mustard dressing:
3 tbsp olive oil
1½ tbsp white wine vinegar or apple cider vinegar or rice vinegar
1 tsp wholegrain mustard or Dijon mustard
1 tsp honey
Salt and black pepper

Method
Place the potatoes in a saucepan of salted water. Bring to the boil, then simmer for 15–20 minutes, or until tender.
Meanwhile, whisk together all the dressing ingredients. Generously season to taste with salt and black pepper.
Drain the potatoes well and allow them to steam-dry for one minute.
Place the warm potatoes and sliced red onion in a large bowl. Pour over the dressing and gently toss together. Leave for five minutes so the potatoes can absorb the flavours.
Add the lamb’s lettuce and chopped chives. Toss gently, making sure the leaves are coated without becoming too wilted.
Serve straight away while the potatoes are still warm.

Tip
Add toasted walnuts, crumbled feta or goat’s cheese to turn it into a more filling lunch.
