WARM HERBY CHARLOTTE POTATO SALAD

A fresher, lighter take on potato salad, made with buttery Charlotte potatoes, a simple Dijon dressing and plenty of fresh herbs.
The trick is to dress the potatoes while they’re still warm, so they soak up all that lovely flavour. It’s perfect for BBQs, picnics, summer lunches or as a simple side dish with dinner.
For a crispy twist, boil the potatoes first, then air fry at 200°C for 8–10 minutes before tossing with the dressing.

Fresh, vibrant and full of flavour, this warm Charlotte potato salad combines buttery potatoes with a light Dijon dressing and plenty of fresh herbs. Perfect for barbecues, picnics, or as a delicious side dish all year round.

Cook time: 20 minutes
Ingredients
800g Charlotte potatoes
2 tbsp extra virgin olive oil
1 tbsp Dijon mustard
1-2 tbsp red wine vinegar or white wine vinegar
1 tsp honey
2 spring onions, finely sliced
2 tbsp fresh parsley, finely chopped
1 tbsp fresh chives, finely chopped
Salt and freshly ground black pepper

Method: Potatoes
Wash the potatoes thoroughly. Cut the larger potatoes in half so that all the pieces are a similar size. Leave the smaller potatoes whole.
Place the Charlotte potatoes in a pan of salted water and bring to the boil. Simmer for 15–18 minutes, or until just tender.
Drain the potatoes and leave them to steam dry for a couple of minutes.

Method: Dressing
In a small bowl, whisk together the olive oil, Dijon mustard, white wine vinegar and honey until smooth.
Place the warm potatoes into a large serving bowl and pour over the dressing. Gently toss until the potatoes are evenly coated.
Stir through the spring onions, parsley and chives. Season with salt and freshly ground black pepper to taste.
Serve warm or allow to cool slightly before serving.

Tip
Dress the potatoes while they're still warm. They'll absorb more of the dressing, giving you a more flavourful potato salad.
Variations
Add crispy bacon pieces for extra savoury flavour.
Stir through crumbled feta or goat's cheese.
Mix in sliced radishes or cucumber for added crunch.
Add a handful of rocket or baby spinach just before serving for extra freshness.

Optional Crispy Version
For a delicious twist, once the potatoes have been boiled and drained, air fry them at 200°C for 8–10 minutes until lightly golden and crisp around the edges. Toss them with the dressing while still warm for a potato salad with a wonderful crispy texture.
