Radish & Smashed Avocado Sourdough Toast

Creamy smashed avocado, crisp sourdough and crunchy radishes make this simple toast fresh, satisfying and packed with flavour. Whether you choose fresh or quick pickled radishes, it's a delicious meal that's ready in just 10 minutes.

Prep time: 10 minutes

Ingredients

1 slice of sourdough bread

½ ripe avocado

Juice of ¼ lemon

Salt and freshly ground black pepper, to taste

3–4 fresh radishes, thinly sliced or pickled radish 

A small handful of fresh coriander, roughly chopped

Freshly cracked black pepper

Method

Toast the sourdough until golden and crisp.

In a small bowl, mash the avocado with the lemon juice, a pinch of salt and a little black pepper until smooth but still slightly chunky.

Spread the smashed avocado generously over the warm toast.

Top with the fresh radishes or quick pickled radishes.

Sprinkle over the fresh coriander and any optional toppings of your choice.

Finish with a twist of freshly cracked black pepper and serve immediately.

A sprinkle of sunflower seeds

Pumpkin seeds

Mixed seeds

Chilli flakes

A drizzle of extra virgin olive oil
