Easy Garlic, Ginger & Chilli Pak Choi

A quick and flavourful side dish with tender pak choi coated in a glossy garlic, ginger and soy sauce. Perfect with rice, noodles, fish, chicken, pork or tofu.

2–4 as a side


Ingredients
2 heads of pak choi (or 4 baby pak choi)
Water, for blanching
For the sauce
1 tsp sesame oil
1 tsp neutral oil (such as vegetable or sunflower oil)
2 garlic cloves, finely chopped
1 tsp fresh ginger, grated or thinly sliced
1 red chilli, finely sliced and deseeded (adjust to taste)
2 tbsp light soy sauce
1 tbsp honey
1 tsp cornflour
150 ml water
1 tbsp toasted sesame seeds, to serve

Method
Bring a large pan of water to the boil. Add the pak choi and blanch for 1–2 minutes, until just tender but still vibrant green. Drain well in a colander.

While the pak choi is blanching, heat the sesame oil and neutral oil in a frying pan or wok over a medium heat. Add the garlic, ginger and chilli, and fry gently for about 30 seconds until fragrant. Be careful not to let the garlic brown.

In a small bowl, whisk together the soy sauce, honey, cornflour and water until the cornflour has completely dissolved.

Pour the sauce into the pan with the garlic, ginger and chilli. Stir continuously until the sauce begins to thicken slightly. If it becomes too thick, simply add a splash more water until you reach your preferred consistency.

Add the drained pak choi to the pan and gently toss until every leaf is coated in the glossy sauce.
Sprinkle with toasted sesame seeds and serve immediately.
