Creamy Perpetual Spinach & Potato Gratin
Perpetual spinach is the star of this comforting gratin, layered with tender potatoes, garlic and a creamy cheese sauce. Serve it as a warming side dish or enjoy it on its own with a fresh salad.

Ingredients
300g perpetual spinach
1kg potatoes
2 garlic cloves, finely chopped
1 tbsp butter, plus extra for greasing
250ml double cream
200ml milk
120g grated cheese (mature cheddar is best but any cheese is fine)
30g Parmesan or Grana Padano, finely grated
¼ tsp ground nutmeg, optional
Salt and black pepper


Method
Preheat the oven to 190°C/170°C fan/gas mark 5.
Wash the perpetual spinach thoroughly. Separate any thick stalks from the leaves and chop them finely. Roughly chop the leaves.
Melt the butter in a large frying pan. If you are using the stalks, add them chopped and cook for 2–3 minutes first. Then add the spinach and the garlic and cook for another 1-2 minutes. Remove from the heat and drain away any excess liquid if there is any.

Peel the potatoes, if preferred, and cut them into thin slices approximately 3mm thick.
Pour the cream and milk into a jug. Add the nutmeg, a little salt and plenty of black pepper, then mix together.
Arrange one-third of the potatoes in the baking dish. Top with half of the spinach and a little cheddar. Repeat the layers, finishing with the remaining potatoes.

Pour the cream mixture evenly over the gratin. Sprinkle over the remaining cheddar and Parmesan.
Cover loosely with foil and bake for 40 minutes. Remove the foil and bake for another 25–30 minutes, until the potatoes are tender and the top is bubbling and golden.
Leave the gratin to rest for 5–10 minutes before serving.

Tip:
Perpetual spinach stalks are edible too. Chopping and cooking them for a few minutes before adding the leaves ensures nothing goes to waste.
